Triple chocolate brownies

I’ve decided to share one of my favourite brownie recipes with you guys, and after one or two obligatory ‘practice runs’ (my excuse for eating *approximately* 2840 brownies) I’ve concluded the recipe is just right to share!


  • 150g unsalted butter
  • 100g milk chocolate
  • 100g dark chocolate
  • 50g white chocolate
  • 85g plain flour
  • 275g golden caster sugar
  • 3 eggs
  • 40g cocoa powder
  1. Pre-heat the oven to gas mark 4 and fill a saucepan halfway with hot water. Leave this to boil.
  2. Measure out 50g of the milk chocolate, adding it into a bowl with 100g of dark chocolate and the unsalted butter – which should be cut into chunks. Place this bowl on top of the saucepan, occasionally stirring the chocolate and butter until completely melted.
  3. Break the eggs into a bowl and follow with the golden caster sugar. You should whisk this until it looks thick and creamy.
  4. Once the eggs and sugar are mixed you should add in the melted chocolate and butter and fold this mixture in using the figure of 8 movement.
  5. Sieve in the flour and cocoa powder once this has been done and again, fold the mixture in, adding in 50g of cut up white chocolate chunks and 50g of milk chocolate chunks. Mix this until the chunks are evenly distributed throughout the mixture.
  6. Pour the mixture into a pan lined with butter or grease-proof paper and place in the oven, moving the oven up to gas mark 5.
  7. Leave in the oven to cook for 30 mins. If not yet cooked through leave for another 5-10 mins.
